Meat Lovers Megasteak Delight

Behold food technologist Prof. Atze Jan van der Goot and his 3x30x60 cm mega steak! The taste is a bit bland still but the texture resembles animal muscle tissue, which gives it a great 'bite'. The mega steak was grown in a laboratory at Wageningen University (The Netherlands) with a process that, according to the researchers, resembles the baking of bread. And it is vegetarian too.

Once produced at an industrial scale, the mega steak would be more sustainable than traditional meat, yet its most important quality is its size. While vegetarian alternatives typically aim to resemble meat products and end up as inferior copies, this mega vega steak is a fetish amplification of the real thing, with a certain luster and authenticity of its own.

What is your view on the coronavirus?

Siri Beerends: I really embrace the idea that viruses can teach us a lesson in modesty. It is necessary that our position as the dominant species on the planet is being challenged. I also agree that it is a mistake to think that we are becoming Gods. But unfortunately, this is actually what is happening now. Corona doesn’t teach us to be modest, it teaches us how we can -as quickly as possible- go back to business as usual: saving our capitalistic economy.
