Promising food design projects do not always find their way to producers, the market and ultimately to consumers. Why is that and what can we do to advance these ideas? Why is it not possible to scale up, and is that even desirable for every project? How can we strengthen the role and urgency of food designers in the food system? The Embassy of Food (part of Dutch Design Week) explores exactly this through an exhibition and a conference at the Klokgebouw in Eindhoven. Here's what you need to know about the conference.

What can you expect?

The keynote presentation will be held by synthetic biologist Dr. Nadine Bongaerts, Senior Scientist of Molecular Biology at the French food startup Gourmey; the first French in vitro meat company to develop an ethical foie gras based on stem cells.

Sharp & Sour is a design duo that shapes the futures of food through design. The duo will present ‘The Museum of Endangered Foods’, which details the plight of foods such as avocados and wine if actions are not taken to fight climate change. 

Emma van der Leest is biodesigner and the founder of BlueCity Lab, a biocircular playground for so-called bioneers in Rotterdam (NL). In her work she focuses on the development of more sustainable practices through biodesign. During this event Emma will introduce us to the 'Microbial Vending Machine', a speculative design for nonfood products based on the use of microbes.

Katinka Versendaal is a designer and founder of The Eatelier, a research based food design studio exploring the way we eat food now and in the future. Katinka will introduce us to ‘The Green Bean’ project, which examines the possibility of developing more sustainable alternatives for dairy products.

The event will be moderated by Ruben Baart, editor-in-chief at Next Nature Network.
